The other day I was at the store and boneless, skinless chicken thighs were on sale. I have found that I prefer thighs to breasts (yeah, I know) so I picked up a couple packages. Baked chicken thighs are good and everything, but still a little boring. I had a flash of inspiration and made this:
I browned the chicken thighs in olive oil. Once brown on both sides, I added a can of Italian style diced tomatoes, some extra oregano and simmered for about 30 minutes. At the end, I sprinkled with Parmesan cheese.
Nothing groundbreaking, but it was good. I'll definitely be making this one again. I think next time I'll add some mushrooms or zucchini.
