Poppers

I love Jalapeno poppers. You know, half a pepper stuffed with cream cheese, breaded and deep fried. Unfortunately, they are not Low Carb friendly. I've found plenty of recipes for low carb poppers, but they all involve more effort than I was willing to put into it this weekend.

My brother makes a snack out of Triscuits, cream cheese and those jarred jalapeno slices. They are really good, but again, not low carb friendly. I thought I could just get some jalapenos and put some cream cheese in them, but that just didn't sound right.

In a flash of low carb inspiration, I thought, "Why can't I do the same thing with pork rinds?"
Now, I'm not the biggest fan of pork rinds, but over the course of the weekend, I cleaned up the bag, the cream cheese and the jar of pepper slices.
